Botanically seen buckwheat is a (shrub) fruit. Because of this, buckwheat has a higher nutritional value than grains. Due to its appearance and the applications buckwheat is however generally compared with grains, such as: wheat, barley, rye, corn, etc.

Proteins in our daily diet provide important building materials for the human body. A protein consists of a large number of amino acids, where of the amino acid lysine primarily is involved the maintenance of the body and for this reason essential. The level of lysine in grains is low. Buckwheat on the other hand contains a high amount of lysine, and furthermore have the other amino acids present such a good composition that is comes close to animal protein like milk- and meat proteins.
